Cucumber yogurt curry is a typical Mangalorean curry, a yogurt-based curry made with simple ingredients that makes a tasty curry to serve with steamed rice. Comfort and healthy traditional curry for everyday cooking recipes.

Ingredients:

To cook –

Mangalore cucumber/yellow cucumber – 1 cup chopped

Onion – 1 medium chopped

Green chilies – 3 or 4 slit

Salt to taste

To grind –

Coconut – 1/2 cup

Cumin – 1 tsp

Garlic – 4 pods

For tempering –

Mustard – 1/2 tsp

Urad dal – 1/2 tsp

Curry leaves – 1 or 2 springs

Red chilly – 2 no’s

Oil – 2 tsp

Yogurt – 1 cup

Method:

Take a vessel all chopped cucumber (remove the skin), onion, slit green chilies, and salt to taste. Add 1 cup of water to cook, bring it to boil

Cook until the cucumber is done. Meanwhile, grind coconut, garlic, and cumin to a smooth paste.

Ensure the veggies are cooked, then add the ground paste, add little water, stir bring it to boil for 5 to 6 mins and remove from the flame.

Heat oil in a pan for tempering, when the oil is hot add mustard, allow it to sizzle, then add urad dal fry until it turns light brown, then add curry leaves and chilies, when it starts to splutter remove from the flame, add it to prepared curry, stir, allow the curry to cool completely, add yogurt before serving.
