Mangalore bonda I Goli baje

Mangalore bonda is a crispy deep fried snack dish, an easy to make recipe with simple ingredients. an addictive snack from Mangalore Cuisine popularly known as Goli Baje or Mangalore Bajji / Mangalore Bonda. Soft from inside and little crisp from outside which taste just heavenly when served with coconut chutney.
Ingredients:
Maida – 1 cup
Gram flour – 3/4 cup
Rice flour – 2 tbs
Curds – 1 cup
Ginger – 1 tsp grated
Green chilies – 2 no’s chopped
Sugar – 1 1 /2 tsp
Salt to taste
Cooking soda – 1/4 tsp

Method:
Sieve the flour, add it in a clean bowl, add all the ingredients except curd, toss it well.
Add curds mix it, as there in no lumps in it.
Combine the batter to idli batter consistency, add little by little water to bring it to idli batter consistency. Heat oil in a pan,
Once the oil is ready for frying ,wet your fingers; take a small amount from the batter drop it in the oil. Drop 4 to 5 at a time in the oil and wet your fingers each time to get a nice round shape.You will observe that will bloat and start floating in the oil.
Deep fry it in a medium flame, until it turns to golden brown. Remove it with a slotted spoon, drain the excess oil in it, put it on a paper napkin to absorb excess oil in it. continue the same for rest of the batter in other batches.
Serve hot with coconut chutney.
