Maddur vada recipe or how to prepare maddur vada

Maddaur vada is a very popular snack and it is unique to the state of Karnataka. It is super delicious snack with a cup of a tea or coffee. It is prepared by adding maida, rice flour and chiroti rava mixed with chopped onions with other simple ingredients, which is flat and crispy.This vada is available in the town of Maddur, so the name dervied as” Maddur Vada’ . It has a very different taste from other vada’s and it is instant vada that can be made in just 15 min.
Preparation time – 10 min
Cooking time – 15 min
Serves – 4 to 5.
Ingredients:
Maida – 1 cup
Chiroti rava – 1/2 cup
Rice flour – 1/2 cup
Onion – 3 nos (thin sliced)
Green chilies – 2 to 3 nos (chopped)
Curry leaves – 1 spring (finely chopped)
Coriander leaves – 3 tbs (chopped)
Roasted pea nuts – 2 tbs (broken into two pieces)
Sesame seeds – 1 tbs
Butter – 25 gsm
Salt to taste
Oil to fry
Procedure:
Take a bowl add maida, chiroti rava, rice flour and butter and mix well, add chopped onions, green chilies, curry leaves, coriander leaves, salt to taste peanuts and sesame, mix all the ingredients well to make stiff dough.Rest it for 10 min
Divide the dough into small ball shape and flattend it on a plastic sheet by applying oil to your fingers.
Heat Oil in Kadai and when it becomes hot drop 4 to 5 vada’s in oil and deep fry until it is crispy and golden brown. Fry on both sides in a medium flame.
Serve hot with coconut chutney.
