Long Beans stir fry I Mangalore Alasande Palya

Long beans stir fry is a healthy and delicious side dish for rice or roti’s, Long beans is a very healthy vegetable. It is rich in Vitamin C and A and also has a good amount of minerals which are good for our health. This is a very common dish prepared in south India. Tastes very good with Rice and sambar/Rasam. It is a quick and easy side dish with simple ingredients.

Ingredients:

Long beans – 250 gm

Mustard – 1/4 Tsp

Chana dal – 1/2 Tsp

Urad dal – 1/2 Tsp

Asafoetida – 1/4 tsp

Curry leaves – 2 spring

Dry chilly – 2 no’s

Coconut – 1/2 cup grated

Coriander – a small bunch chopped

Salt to taste

 

 

 

 

Method:

Rinse long beans, chop it to your desired length, finely or 1/2 inch lengthy and keep ready.

Heat oil in a pan, when it is hot add mustard when it begins to splutter add chana dal and urad dal fry until it turns to light brown, then add asafoetida, curry leaves, and dry chilies (broken into two pieces) fry for a sec

Add chopped long beans, saute for few min, add salt to taste, add 1/2 cup of water cook covered in a medium flame. ( if you are cooking in a pressure cooker add 1/4 cup of water, pressure cook it for 1 whistle, once done bring the curry to boil until the water gets absorbed completely.)

Saute in between before the beans are cooked, once it is cooked/ water in the curry gets absorbed add grated coconut, saute for few secs. remove from the flame.

Garnish with fresh coriander, serve as a side dish for Rice/ Rotis.
