Long Beans Curry I Alasande Sukka I Mangalore Alasande palya

Long beans curry is a healthy and delicious side dish for rice or roti’s, Long beans is a very healthy vegetable. It is rich in Vitamin C and A and also has a good amount of minerals which are good for our health. Alasande Sukka is a popular Mangalore recipe made with a blend of aromatic spice and fresh coconut. A healthy and very tasty curry to serve as a side dish for Rotis or rice with sambar/rasam.
Ingredients:
Long beans – 500 gm chopped finely
Mustard – 1/2 Tsp
Curry leaves – 2 springs
Onion – 2 no’s chopped
Tomato – 2 no’s chopped
Turmeric – 1/2 tsp
Chilly powder – 1 Tsp
Salt to taste
Oil to fry
Coriander – 1/2 bunch chopped – for garnishing
To make a coarse powder – (to add finally) –
Coconut – 1/2 cup
Garlic – 4 to 5 cloves
Cumin – 1 tsp
Dry Kashmir chilies – 2 no’s
Method:
Heat oil in a vessel/pressure cooker, when it is hot add mustard, allow it to splutter, then add chopped onion and curry leaves, fry until onion turns translucent.
Then add tomatoes, saute until it becomes soft.
Add cleaned and chopped Long beans into, fry for few secs, add chilly powder, turmeric and salt to taste, toss it well, saute well for 2 mins, Add 1/2 cup of water, stir. Close the lid and pressure cook for 1 whistle.
Once it is done, bring the curry until the water in the curry gets absorbed completely. Meanwhile, blend coconut, cumin, dry chilies and garlic to a coarse powder without adding water.
Ensure the water is absorbed then add coconut mixture, toss it well.
Finally, add chopped coriander, toss once again, turn off the flame.
Serve as a side for Roti/Sambar Rice.
