Lemon rice

Lemon Rice popularly known as chitranna in Karnataka, is easy to make yet delicious rice dish. Lemon rice is one of the most commonly made South Indian rice dishes for any occasion and also distributed as prasad in many temples. Lemon juice gives a very refreshing and tangy flavor to the rice. Rich in Vitamin C and you can add nuts to make it more nutritious. One good thing about this recipe is a good solution to leftover rice as well.
Ingredients:
Rice cooked – 2 cups
Mustard seeds – 1/2 tsp
Groundnut (peanut) – 2 tbsp or more of your choice
Chana dal – 1 tsp
Urad dal – 1 tsp
Ginger – 1 tsp (grated )
Coriander leaves – 1 cup (chopped)
Curry leaves – 20 leaves
Green chili – 5 to 6 nos split into two pieces.
Turmeric – ½ tsp
Coconut – 1 cup grated/shredded
Freshly squeezed lemon juice – 1 tbs (juice of 2 medium sized lemon)
Salt
Oil to fry
Method:
Heat oil in a Kadai, Add groundnut fry until it turns to golden color, remove and set aside, in the same oil add mustard allow it to splutter, add chana dal and urad dal fry them till golden brown.
Add grated ginger, chopped/ slitted green chilies, curry leaves, chopped coriander leaves, when it stops to crackle, add turmeric powder, salt and grated coconut, fry for a while. remove from the flame.
Squeeze fresh lemon juice into it, While mixing rice with the prepared mixture you can add roasted peanuts so that it remains crisp.
Mix cooked rice with the seasoning prepared and mix well.
Chitranna is ready to serve.To enhance the taste add chopped fresh coriander finally and also freshly shredded coconut.
