Lemon Pepper chicken

Lemon Pepper chicken is a delicious side dish, a quick and easy to make a recipe with simple ingredients, light and a flavorful side dish to enjoy with rice or rotis.
Ingredients:
For Marination –
Chicken – 500 gm
Yoghurt/Curd – 1/2 cup
Soy sauce – 1 Tsp
Lemon juice – 1/2 tsp
Pepper powder – 1 1/2 Tsp
Salt
Other Ingredients –
Oil/ghee – 2 tbs
Bay leaves – 2 no’s
Green chillies – 4 or 5 no’s
Garlic – 1 Tsp crushed
Ginger – 1 inch chopped
Lemon juice – 1 Tsp
Pepper powder – 1 Tsp
Coriander – for garnishing
Method:
Rinse chicken, Drain the water in it completely. Marinate chicken with yoghurt, pepper powder, lemon juice and salt for 1 hr.
Heat oil in a pan when it is hot, add Bay leaves saute for few secs, then add green chillies (slit) fry for few secs, then add crushed garlic and ginger, saute until you get a nice aroma.
Now add marinated chicken, saute, Cook, covered on a medium-low flame for 15 mins.
Add crushed pepper powder and lemon juice, saute well, cook until chicken is done and water gets absorbed completely.
Ensure the chicken is cooked and the water is absorbed completely, add pepper powder and chopped coriander, toss it well, switch off the flame.
