Lady’s finger Stir fry I Okra curry I Bendekai palya

A Simple and easy recipe for lady’s finger which goes well as a side dish for rice or Rotis needs no pre-frying, a quick and easy recipe which can be prepared in a short time. Lady’s finger or known as okra is green edible pod vegetable which contains high nutrition, it has an excellent source of fiber which helps maintain a healthy digestive system, provides a good value of magnesium, iron, and calcium, Regular consumption of lady’s finger ensures lesser absorption of cholesterol… totally Lady’s finger is a Powerhouse of Nutrition.
Ingredients:
Lady’s finger – 250 gm
Mustard – 1/2 tsp
Curry leaves – 2 springs
Onion – 1 medium chopped
Tomato – 1 medium chopped
Chilly powder – 1 tsp adjust to you taste
Salt to taste
Coconut – 1/2 cup grated
Oil – 3 tbs

Method:
Rinse Lady’s finger remove the edges of each veggie and then chop finely. Keep all the other ingredients handy.
Pour oil into a non-stick pan and when it becomes hot add mustard seeds.When the mustard pops add curry leave, add chopped onion fry until it turns to translucent then add tomato Saute few min
Add bhindi, stir continuously, add salt to taste and the chilly powder stir. Cover and cook till bhindi get cooked in a medium flame. (no need to add water)
Remove the lid and let the mixture become dry and non-sticky by letting it get cooked on low flame.
When bhindi starts becoming slightly brown and the mixture becomes dried, add coconut and mix well.
Healthy and delicious Lady’s finger stir fry is ready to enjoy as a side dish for sambar rice, dal rice or a perfect side dish for Roti or pulkas.
