Lady’s finger curry or okra curry recipe
Ladies finger or okra is one of the highly nutritious low calorie vegetable that is often used to prepare sambar, curry or stir fry in Indian Cuisine. Today i am sharing ladies finger curry called as bendakayi palya in kannada a traditional south Indian curry.It is one of the best way to serve bhindi curry and is mostly liked by all.It is quick and easy recipe with simple ingredients makes a yummy and tasty curry for roti,chapati,pulka or as a side dish for rice.
Preparation time – 10 min
Cooking time – 10 min
Serves – 4
Ingredients –
Lady’s finger/okra – 250 gm cut into medium pieces.
Onion – 2 medium chopped
Curry leaves – 2 springs
Sambar powder – 1 tbs
Coconut – 1/2 cup grated
Mustard seed – 1/2 tsp
Turmeric powder – 1/4 tsp
Coriander leaves – 1 bunch chopped
Salt to taste
Oil to fry
How to prepare lady’s finger curry
Wash and pat dry okra/lady’s finger,cut into medium pieces,heat a kadai add chopped lady’s finger,dry fry for a while then add 1 tsp of oil and fry it becomes soft.Remove and set aside
In the same kadai add oil,when it becomes hot add mustard seeds,when it starts to crackle add curry leaves,chopped onions and fry till it turns to translucent.
Add fried okra/lady’s finger ,fry for a while
Add sambar powder power and fry for a while,add salt to taste
Add 1/2 cup of water and bring it to boil.Cook in a low flame by closing the lid of the kadai
Cook till it becomes soft ,until it is done.
Finally add grated coconut and mix altogether.
Turn off the flame.Add chopped coriander leaves to enhance the taste of the curry.
Enjoy this traditional curry as a side dish for roti or rice.
