Home made Boondi Laddu is a delicious Indian sweet made for special occasions and for festivals like Diwali. Laddu or ladoo are ball shaped sweets popular in the India, Boondi laddu a delicious and colorful festive sweet enjoyed equally by young as well as aged people. Laddus are considered as a auspicious mithai as they are Lord Ganesh’s favourite. Making these laddu’s is a time consuming process, If you are patient and enjoy the pursuit, you will enjoy making these pearly laddu’s.

Preparation time – 10 min

Makes about 20 medium laddu’s
Ingredients
Fresh gram flour – 1 cup
Milk – 3/4 cup
Sugar – 1 cup
Ghee – 2 tbs (melted)
Turmeric powder – 1/2 tsp
Cashew nut – 2 tbs (broken into small pieces)
Raisins – 2 tbs
Almond – 2 tbs chopped
Cardamom powder – 1/4 tsp
Rose essence – Few drops
Method –
To make or to prepare Laddu –
Sieve the flour, add gram flour, turmeric powder in a bowl mix, Add little milk at a time and stir until all lumps gets dissolved. Add melted ghee (cooled at room temperature). Whisk the batter until it gets pouring consistency (for making batter from 1 cup gram flour i have used 3/4 cup of milk). Keep it aside for 10 minutes.
How to make sugar syrup:
Take sugar in any utensil and add 1/2 cup water into it. Heat it in a medium flame. Stir
Let the sugar melt completely. After sugar gets dissolved, cook for 3-4 more minutes and then check. Take 1-2 drops of syrup in a bowl, make it cool down and check with help of your thumb and forefinger. It should have one thread consistency.
Add few drops of rose essence and switch of the flame, close the lid of the pan. (so that the syrup remains hot). Sugar syrup for laddu is ready .
Take oil in a pan and place it on a medium flame for heating. when oil is hot, Stir the gram flour mixture for one more time nicely. Place the slotted spoon 6-7 inch above the pan and pour gram flour batter on top of it with help of a ladle,(keep moving the spoon in a circular motion) so that the mixture falls in hot oil, cook in a medium flame. Stir for 2 min.
Make a low flame and remove it with a slatted spoon. Drain the oil in it.
Put it directly into sugar syrup.( Once you add prepared boondi into sugsr syrup close the lid of it) Continue the same procedure for rest of the batter.
Once you add boondi in the syrup, mix cashew nuts, chopped almond,raisins and cardamom powder, mix all ingredients nicely.
Soak the boondi in syrup for 30 min. Boondi will absorb syrup.
Wash your hand, pat dry.Take a small portion of prepared mixture,squeeze tightly and make it to a ball shaped laddu’s. Make a uniform size balls (no need to grease your palm as it will be sticky) Once it is all done, keep it for 15 min, after minutes once again shape it finally to get shiny finish.
Homemade Delicious Boondi Laddu’s are ready to serve.
Note – You can adjust sugar as per your taste.
Add prepared boondi into hot/ warm surup, dont allow the sugar syrup to become cool if the syrup becomes cool, the syrup get crystallize. Shape laddu’s when the syrup is warm.
Do not over roast when you fry boondi, it should be yellow and crisp not to turn it to golden colour.
You can roast dry fruits in ghee or you can add raw nuts , left to your choice. I have added raw as it becomes soft if it is fried also.
No need to grease your palm when you shape laddu as boondi is filled with sticky sugar syrup.
It can be preserved for a week at room temperature.
The consistency of the batter should be like dosa batter consistency.
I have prepare batter with milk, which gives a rich taste for laddu’s, when compared to batter prepared with water.
The milk must be boiled and cooled at room temperature.
