Kuska rice recipe I plain biryani

Kuska rice is plain biryani made in south Indian Muslim style.Today i am sharing a quick and easy biryani, served with non vegetarian side dish like chicken kurma or any spicy curry. Kuska rice is usually prepared or cooked by adding chicken stock or mutton stock which is quick and easy to make recipe, perfect rice dish for any spicy curries.
Preparation time – 10 min
Cooking time – 20 min
Serves – 4
Ingredients –
Jeera samba rice/Basmati rice – 2 cup
Onion – 3 medium chopped
Green chilies – 4 no’s chopped
Coriander – 1 bunch chopped
Mint – 1 bunch chopped
Ginger garlic paste – 1 tbs
Coriander powder – 1 tsp
Bay leaf – 2 leaves
Star anise – 2 no’s
Clove – 5 to 6 no’s
Cinnamon – 2 sticks
Chicken stock or mutton stock – 1 cup
Salt to taste
Oil to fry
Method –
To make or to prepare Kushka rice –
Keep all the above shown ingredients ready, Heat a pan by adding oil in it, when it is hot add dry spice , saute for a minute, add green chilies and ginger garlic paste saute until you get a fresh aroma, in a low flame. Add chopped onion, chopped herbs together and saute until onion turns translucent.
Wash rice (jeera samba rice) in running water drain in it,
Add rice and saute for a minute.
Add chicken/mutton stock into it. Mix
Add 3 cup of water and salt to taste, sprinkle coriander powder and chilly powder (optional).Bring it to boil in a medium flame, when it starts boiling, cook in a low flame by closing the lid of the pan, for 15 min. Stir one or two times occasionally before it is done.
When it is done turn off the flame. Add 1 tbs of ghee all around it, mix cover the lid for 5 to 10 min before you serve.
Enjoy Kuska rice with any spicy curry.
Note – To prepare this recipe, i have used jeera samba rice. If you prefer basmati rice to prepare this recipe, soak rice for 10 to 15 min, drain the water in it and follow the same procedure as shown above.
Adding stock of chicken / mutton is left to your choice of any quantity.
You can also add 1 cup of coconut milk in preparation, which gives a rich taste to the dish.
