Ksheerannam Recipe I Milk pongal I Paal pongal
Ksheerannam or milk Pongal is a milk delicacy made with rice, Which is offered to god and distributed in many temples as prasad in Danurmasam. In childhood, we used to get different types of Pongal in this season which is evergreen in my heart. Ksheera is a Sanskrit word which means milk and Anna means cooked/steamed rice. Ksheera anna is simple and easy to make recipe prepared by cooking rice with milk and added to rock sugar candy/sugar, seasoned with ghee cardamom powder and nuts, which tastes rich and yummy in taste. Try and enjoy this traditional recipe as a nivedyam/prasad on special occasions. Happy Pongal 🙂

Method:
Wash and rinse rice, drain water in it, pressure cook or cook rice by adding milk
(for 1 cup of rice add 4 cups of milk pressure cook for 3 to 4 whistles) and set aside.
Heat a cup of milk in a casserole, When it begins to boil add rock sugar candy/sugar into it. Allow it to dissolve completely.
Ensure that sugar is dissolved completely in milk then add cooked rice into it and combine
Add more milk if necessary. Bring it to boil
Add 3 tbs of ghee and sprinkle cardamom powder, mix together make a low flame and cook for 5 to 6 min, close the lid of the casserole.
Heat a tadka pan by adding remaining ghee in it, when it is hot fry cashew nut until golden brown in color, then add raisins saute until it gets light brown and fluffy, Remove it from the flame.
Add it and combine once again. Switch off the flame.
Traditional Ksheerannam is ready to offer God as a nievedyam/prasad. Enjoy hot or chilled.
Notes –
Once you pressure cook rice, you can mash it with a potato masher slightly.
It is a healthy recipe to feed your toddlers.
In some temples we get sugar candy (white in colour) as prasad, you can use it to prepare this recipe.
Add ghee and sugar to adjust your taste and choice.
Before adding milk in casserole heat a cup of water bring it to boil for 5 to 6 min remove it, then add milk to avoid scattering.
