Kosambari or how to prepare Kosambari

A very traditional South Indian side dish is ‘Kosambari’. Its main ingredient is Cucumber mixed with split green gram, coriander leaves, coconut gratings, chilies, lemon juice and any fruits like pomegranate, grapes, etc., here I have used pomegranate. It is a tasty and healthy salad to lunch as well as in the evening snack. Try this mixed Kosmbari.
Preparation time – 10 to 15 min
Cooking time – 2 to 3 min for seasoning
Serves – 4 to 5
Ingredients :
Cucumber – 1 cup (chopped finely)
Chana dal – ½ bowl (soaked)
Moong dal – ½ bowl (soaked)
Carrot – 1 cup (grated)
Pomegranate – 1 cup (peeled)
Coconut – 1 cup
Green chilies – 2 to 3 nos
Curry leaves – 10 to 15 leaves
Coriander leaves – 1 cup (chopped)
Mustard seeds – ½ tsp
Lemon juice – 1/2 lemon juice
Salt to taste
Oil – ½ tsp
Procedure:
Soak the moong dal and chana dal in a separate bowl for 30 min and drain the water, keep it aside. Take a bowl to add soaked chana dal, moong dal, grated carrot, cucumber finely chopped, pomegranate seeds, chopped coriander, chopped green chilies, mix all together add salt and lemon juice, mix properly and keep aside.
Take a tadka pan, heat ½ tsp of oil in it and put mustard seed when it begins to sparkle add curry leaves and give this seasoning to the prepared mixture.
Kosambari is ready to be served.
