Kodo Millet Dosa recipe

Millet’s are extremely good source of fiber and protein compared with white rice. Millet’s are rich in antioxidants and micro nutrients and thereby help to maintain good immunity and other physiological functions. Millet’s are becoming popular as awareness about their health benefits. They have proved to be a useful diet for diabetic people, and also to reduce body weight. Kodo millet dosa is an ideal breakfast dish to start your day with energy and to maintain a balanced diet.
Ingredients:
Kodo millet – 2 cup
Urad dal – 1/2 cup
Methi seeds – 1/2 tsp
Flatten rice – 1/4 cup
Other ingredients –
Salt to taste
Cooking soda – 2 pinch (optional)
Oil / ghee /butter to make dosa

Method:
Rinse millet, drain water in it, soak it by adding fresh water, rinse urad dal and flattened rice soak it separately. Soak it for 3 to 4 hrs.
Drain the soaked water completely, if you are grinding in a grinder, put all the soaked ingredients together, blend it to a super fine paste by adding enough water to grind, the consistency of the batter must be similar to normal dosa batter consistency, If you are grinding in a mixer jar, grind Urad dal to a smooth paste, add enough water to grind, remove the prepared batter and collect it in a vessel, then add Millets and poha in one or two batches, grind it to a smooth paste, combine properly and Keep the batter for fermentation for 12 hrs or over night.
In the morning the batter rises in quantity naturally after fermentation, add salt to taste and cooking soda (optional) mix with the batter properly and keep ready. Heat a flat pan by greasing enough oil on it,
Take a ladle of batter, pour it in the center of the pan, lightly go on spreading it to a circular motion to make a round shape dosa, sprinkle oil/ butter / ghee of your choice, cook until it is done, Gently flip to the other side and cook for a minute, remove and place it on a serving plate, continue the same for rest.
Serve hot with coconut chutney and sambar.
Crispy , health and delicious Kodo millet dosa is ready to enjoy.
Note –
If you wish to have crispy dosa, spread dosa batter to thin, if you wish to make soft and spongy dosa, grease the tawa with oil, pour a ladle of batter in the center of the pan (do not spread) , cook it in a medium low flame, cover the lid of the pan and cook until it is done.
You can prepare dosa with any Millet’s following the same measure/ ratio.
