Kashi halwa or Ash gourd halwa

This is a famous recipe from Karnataka which is also called Dumrot.This dish is served on many occasions for morning breakfast with idli vada sambar and Pongal. A healthy sweet dish for any occasions, made with grated ash gourd, sugar, and ghee.  It is rich in vitamins, minerals, carbohydrates, and proteins and very easy to prepare recipe with few ingredients.

 

 

 

 

Ingredients:

Grated Ash gourd – 2 cups [water must be squeezed]

sugar – 1 cup

Ghee – 3 tbs

cardamom powder – 1/4 tsp

Cashew nuts raisins – 1/4 cup

Method:

Procedure:-

Take a pressure pan, heat it by adding ghee in it, when it becomes hot fry cashew and raisins to a golden brown and remove it and keep aside.

In the same ghee, add grated ash gourd fry till the raw smell evaporates.

Add 1 cup of water and pressure for 2 whistles.

When cooker becomes cool, and pressure settles down of its own, open the lid of it, stir, add sugar bring it to boil, till the ghee separates from it, stir fry till water fully evaporates and till it is done.

Add cardamom powder, mix well add roasted cashew and raisins.

Ash gourd halwa, Damroot is ready to serve. Serve hot or refrigerate for 1 hr and serve chilled.
