Kadai mushroom recipe

Kadai Mushroom  is a tomato based mushroom curry which is a prefect side dish for roti or naan. It is prepared by freshly pound or powdered spices,they add rich aroma and flavor to the dish instead of using ready made spice powders,in this kadai mushroom recipe i have used kova instead of kaju paste which gives a rich taste to the curry.It is a easy to prepare recipe with simple ingredients which taste good with roti or naan.

How to prepare kadai mushroom

Ingredients – To prepare powder –

Coriander seeds – 1 tbs

Cumin seeds – 1/2 tsp

Red chilies – (byadgi) – 5 no

Short chili or Kashmir chili – 4 no

Pepper – 6 to 8 corns

Clove – 4 no

Cinnamon – 2 no

Cardamom – 1

Javitri –  1 small flake.

Procedure to prepare powder for the curry – 

Take a kadai, dry roast all the ingredients shown above,in a medium flame till it turns to golden brown in colour.

Allow the mixture to become cool and transfer it to a mixer jar and make a coarse powder and set aside.

 Ingredients to prepare kadai mushroom –

Button mushroom – 250 gm

Green peas – 1 cup

Capsicum – 1 medium chopped (as shown in the picture)

Onion – 2 medium chopped

Tomato – 2 medium( to be made a puree)

Ginger garlic paste – 1 tbs

Plain kova – 50 gm

Kasuri methi – 1 tsp

Coriander leaves – 1 cup chopped

Salt to taste

oil/butter /ghee to fry

Procedure – 

Make tomatoes into puree and keep ready.

wash and clean mushroom chop into medium pieces and keep ready

Take a kadai add 2 tsp of oil or ghee in it add mushroom in it,fry till the raw smell evaporates and set aside.

In the same kadai cook green peas till it is done by adding little water and salt to taste.

Set aside.

In the same kadai add 3 tbs of oil or ghee ,when it becomes hot add chopped onions and fry to golden brown

Add ginger garlic paste

Fry till the raw smell disappears from it

Add tomato puree into it and fry till the oil separates from it.

Add prepared powder for the curry,mix all together

Add cooked green peas along with the water ,bring it to boil for a while.

Add mushroom and capsicum  into it.when the curry becomes thick add kova and mix properly /boil till kova dissolves in the curry.

Finally add kasuri methi and chopped coriander leaves and turn off the flame .Add butter when you serve.

Aromatic Kadai mushroom is ready to be served with roti/naan.
