Jack fruit fritters recipe

Jack fruit fritters is a popular Manglorean dish, a seasonal dish often prepared in all houses of south canara, Crunchy on the outside, soft inside with dominant flavors of the jack fruit which is just irresistible in taste, an easy to make recipe made with rice, jaggery, jack fruit and coconut, the natural flavour of jack fruit gives a delectable flavorsome taste to munch as a evening snack with a cup of tea or coffee.
Ingredients:
Rice – 1 cup
Jaggery – 1/2 cup grated (adjust to your taste)
Jack fruit – 1 cup
Coconut – 1/4 cup grated
Cardamom – 2 no’s
Salt – 1 pinch
Sesame – 2 tsp
Oil to deep fry

Method:
Soak rice for 2 or 3 hrs, drain the water in it and keep ready. Remove the seed in each fruit, peel/cut roughly
Add grated jaggery, jack fruit, blend it without adding water to a paste, when it is done add soaked and drained rice, coconut and cardamom into it, make a smooth paste without adding water. the consistency of the batter must be thicker than idli batter consistency.
Add grounded paste into a clean bowl, add salt and sesame (black or white), mix it properly.
Heat oil in a kadai, when it is ready to deep fry, drop a spoonful of batter into the hot oil in round shape.These fritters start browning soon, So take care,
Cook in a medium low flame until it turns to golden brown in color.
Remove and put it on a paper towel,
Enjoy !!! Store it in a air tight container for 1 week without refrigerating.
Note –
Jack fruit fritters taste rich when it is prepared with coconut oil,
you can also shallow fry them in Paddu/Paniyaram pan too, by making little thin batter.
You can also add/mix 3 tbs of semolina/ rava in preparation.
