Instant Appam recipe I sihi paddu

Appam is a tasty traditional snack of Kerala. The easiest, tastiest and fluffy instant Appam is prepared by preparing a batter by using wheat flour, semolina and rice flour with jaggery, banana and cardamom powder, shallow fried in paniyaram pan by adding ghee, which taste heavenly delicious in taste, the natural flavor of banana adds an unique taste to the dish. An easy to make dish to offer God as a Nievedyam/prasad, which can be prepared in a short time. A quick and delicious sweet dish, crispy on the outside soft and spongy inside. Mildly sweet and fragrant from the addition of cardamom and coconut. A perfect snack with a cup of tea.
Ingredients:
Wheat flour – 1 cup
Rice flour – 1/2 cup
Semolina (rava) – 1/2 cup
Jaggery – 1 cup grated/powdered (adjust to your taste)
Coconut – 1/2 cup grated
Banana – 3 – 4 no’s
Cardamom powder – 1/4 tsp
Cooking soda – 1 pinch (optional)
Ghee – 1/4 cup for frying

Method:
Add ripe banana in a bowl, mash it properly and set aside
Sieve the flour, take it in a clean bowl, add jaggery powder, coconut, cardamom, mashed banana, cooking soda, mix together by adding little by little water to a thick batter, similar to idli batter consistency. (ensure that jaggery is dissolved completely)
Heat paniyaram pan by adding sufficient ghee in it, in a medium flame.
when it is hot, Add prepared batter in each holes with a spoon, cook in a medium flame, add/sprinkle ghee on it.
Maintaining the heat level at medium is important to ensure the appam’s don’t get too dark, when the base turns to golden brown, Flip the appam’s using a skewer/ spoon gently one by one.
Cook until golden brown on the other side. When it is done remove them and set aside, continue the same for the rest of the batter.

Yes you can store it for the next day after preparing appam’s, but not the batter should be stored for next day, advisable to prepare instantly.
