Instant Bread Vada recipe

Instant Bread Vada is a supercilious snack prepared with bread, Instant Bread medu vada is mildly spiced bread fritters with yogurt, semolina, rice flour and other simple ingredients, These taste as delicious as the traditional ones
Ingredients:
Bread – 6 to 7 slices
Rice flour – 1/2 cup
Chiroti rava (thin semolina) – 1/4 cup
Curd – 1 cup
Onion – 1 or 2 no’s finely chopped
Coconut – 1 tbs finely chopped (optional)
Cumin – 1/4 tsp
Ginger – 2 tsp grated
Green chilies – 2 no’s chopped
Coriander – chopped
Curry leaves – 2 springs chopped finely
Salt to taste
Cooking soda – 1 pinch

Method:
Remove the corners of bread slices, roughly cut bread slices into small pieces, crush/crumble it to a powder (coarsely) by hand and keep ready.
Add rice flour, semolina, salt and curd, mix it properly.
Add chopped onion, grated ginger, cumin, chopped curry leaves, coriander, mix it to a soft dough, sprinkle little water if necessary. The consistency of the dough must be soft (not watery)
Divide the dough to equal parts to a big lemon size ball and keep ready. Heat oil in a pan for deep frying.
Now take a ball and gently press to flatten. Then slowly create a hole in the center like you prepare medu vada.
Deep fry the vadas slowly on medium flame. Fry on both sides till they turn golden brown. Drain on paper towel to remove excess oil.
Serve hot vada with coconut chutney or sambar.
