Hyderabadi mutton biryani recipe

Hyderabad is known for Biryani. It is a spicy fragrant and colourful variant of Biryani. In India the traditional style of making the Biryani by cooking the marinated raw meat with spices and then covered with rice and kept on dum until done.
Preparation time – 30 min
Cooking time – 45 min
Marinate Mutton with spices – Over night
Serves – 4
Ingredients: – For Marination
Mutton – 1 Kg
Ginger garlic paste – 1 tbs
Garam masala – 1 tbs
Chili powder – 2 tsp
Turmeric – 1 tsp
Yogurt – 1 cup
Salt to taste
Lemon juice – 1 lemon
Procedure:
Wash Mutton, pat dry and add all the above ingredients mix together and marinate for over night in a refrigerator.
Ingredients: – For Preparation of Biryani
Basmathi Rice – 3 cups
Mint leaves – 1 bunch
Coriander leaves – 1 bunch
Bay leaves – 3 nos
Mace – 1 no
Cloves – 4 to 5 nos
Cinnamon – 4 to 5 nos
Elachi – 2 nos
Saffron – 1 pinch (soaked in warm milk )
Oil – 3 tbs
Procedure :
Wash and soak Basmathi rice for 15 min.Take a deep pan, first boil the water, add 1 tbs of oil, bay leaves, cinnamon, cloves and other spices add rice, and half cook the rice and drain the water and keep a side.
Take a marinated mutton pieces, mix chopped coriander leaves and mint leaves, add 2 tbs of oil.
Now a deep pan or handi, add the marinate mutton in the bottom and add half cooked rice on top of it. Add a layer of chopped coriander leaves and mint leaves.
In a cup add warm milk and soak saffron.
Add the saffron to the pan or handi, cover the pan/ handi with a tight lid or add sticky dough to the edges and cover it with a lid. Cook for 45 min. Sprinkle rose water and garnish with fried onion and cashew nuts.
Ingredients : – For garnishing
Onion – 3 medium sized ( Sliced into thin)
Cashew nuts – 50 gms
Oil to fry.
Procedure :
Heat the pan add oil and when oil is hot add cashew nuts when it turns to brown remove it and keep a side. In the same oil add sliced onion and fry till it is brown in colour.
Hyderabadi Mutton Dum Briyani is ready to be served with tomato and onion salad raitha and boiled eggs.
Tried this recipe this weekend, family members loved it. Even flavored biryani which can be enjoyed by everyone.
