Healthy and easy mixed vegetable sabzi

Healthy and easy mixed vegetable sabzi is a quick and simple south Indian side dish to accompany with roti’s or poori’s. This sabzi can be prepared with veggies like carrot, potato, french beans, green peas, cheviot squash, cabbage, cauliflower, capsicum, which taste delicious with Β roti or poori. It is a common sabzi which is often prepared in all houses in south India. Do try and enjoy as a side dish for roti or poori’s.Β
Preparation time – 30 min
Cooking time – 10 min
Serves – 4
Ingredients –
Mixed vegetables – 1 bowl chopped
Onion – 2 medium chopped
Mustard seeds – 1/2 tsp
Curry leaves – 2 springs
Coriander powder – 1 1/2 tbs (adjust to your taste)
Chilly powder – 2 tsp (Adjust to your taste)
Turmeric powder – 1/2 tsp
Coriander – 1/2 cup chopped
Salt to taste
Oil to fry
Method –
To make or to prepare Mixed veg sabzi –
Chop all the veggies and immerse in water immediately after chopping, Keep all the other ingredients ready.
Heat a pressure pan by adding oil in it, when it is hot add mustard seeds allow it to sizzle in oil, then add curry leaves and chopped onion into it, fry until it turns to translucent, add 1/2 part of chopped coriander and saute.
Add mixed veggies into it (drain the water in it, with a colender) fry and saute in oil for 5 min
Add all dry powders and salt to taste. Fry altogether for a while.
Fry until you get a fresh aroma, add 1/2 cup of water and pressure cook for 1 whistle.
when the pressure of the pan becomes cool by its own, open the lid and bring it to boil to a thick in consistency. Switch off the flame add chopped coriander, mix together.
Enjoy as a side dish for roti or poori’s.
Notes –
You can add any of your favorite veggies to prepare this recipe, of any quantity, add the quantity of coriander powder and chilly powder Β to your taste.
The coriander powder is dry roasted and powdered.
