Grilled Aloo sandwich I Bombay sandwich recipe

Aloo sandwich or Bombay sandwich is an easy and delicious sandwich which can be easily prepared at home. A spicy green chutney, a simple potato bhaji  is prepared  and stuffed with onion, tomato, cucumber slices, which makes a tasty and yummy sandwiches. You can prefer white bread or brown bread in preparation. Just try and enjoy as a breakfast dish or as an evening snack. 

Ingredients:

To make coriander chutney –

Coriander – 1 bunch

Green chilies – 2 no’s (adjust to your taste)

Ginger – 1/2 inch chopped roughly

Salt to taste

Sugar to taste

To make potato bhaji –

Mustard seeds – 1/4 tsp

Cumin – 1/2 tsp

Green chilies – 2 no’s chopped

Curry leaves – 1 spring

Ginger garlic paste – 1/2 tsp (optional)

Coriander – 2 tbs chopped

Potato – 4 no’s boiled and mashed

Turmeric – 1/4 tsp

Salt to taste

Other ingredients –

Butter – 1/2 cup

Cucumber slices

Tomato slices

Onion slice

Chaat masala powder – 2 tsp

Bread slices White or brown

 

 

 

Method:

To prepare chutney –

Add coriander, green chilies, ginger, salt and sugar in a mixer jar, grind it to a chutney by adding little water and keep ready.

To prepare stuffing –

Pressure cook potatoes for 4 to 5 whistles, when it is done, allow it to cool, peel the cooked potatoes, mash it and keep ready.

Heat oil in a pan, when it is hot add mustard seeds, allow it to splutter, add cumin allow it to sizzle, add chopped curry leaves, green chilies fry for a while, add ginger garlic paste (optional)  fry until the raw smell evaporate from it, then add mashed potato, turmeric, salt and chopped coriander, toss it well, remove from the flame and set aside.

Allow it the mixture to cool at room temperature.

To make sandwich –

Keep all the ingredients handy to start. (you can remove the edges of the bread slice)

Apply a generous coat of butter on both side of the slices to get a rich taste, apply a coat of green chutney to the inner side of the slice.

Spread it evenly, spread the potato stuffing inside each slice.

Assemble cucumber, tomato and onion slices on it.

Sprinkle chaat masala powder on it,

Cover the top slice spread it with butter and green chutney on it.

Place it in a preheated toaster or grill, grill it until sandwich turns to golden brown and crisp,

Transfer the prepared sandwich to a serving plate.

Serve hot with tomato sauce and green chutney.
