Green-gram egg curry is a healthy and nutritious curry. A mild spiced curry made with freshly pound/ground Ginger-garlic paste, whole green-gram and crumbled eggs that can be served as a side dish for Dal rice/sambar-rice or with Roti/s/poori’s, a simple and easy curry in a jiffy, sure give it a try :)

Ingredients:

Whole Green-gram – 1/2 cup (sprouted or without sprouts)

Egg – 4 no’s

Green chili – 1 or 2

Onion – 2 medium chopped

Tomato – 1 or 2 chopped finely

Chilly powder – 1 tsp adjust to your taste.

Turmeric – 1 pinch

Oil to fry – 2 tbsp.

Salt to taste

Coriander – 1/4 cup chopped

Chopped Onion to serve

Method:

Add green-gram in a pressure cooker pan, add 1 and a half cup of water, add salt to taste, close the lid of the cooker, pressure cook for 2 or 3 whistles or boil green gram until it is cooked in a vessel be careful not to cook until mushy check in-between and be sure it is done and keep ready.

Heat a pan add 1 tbsp of oil in it, when it is hot break eggs into it, fry until it gets crumbled.

Keep sautéing on a medium flame once it is done remove it to a plate and  set aside.

In the same pan add oil, when it is hot add chopped green chilies, fry for few secs and add freshly pounded or ground ginger-garlic paste, fry until you get a nice aroma for few secs.

Then add chopped onion, fry until it turns translucent, then add chopped tomatoes,

Fry on a medium flame until tomatoes turns soft and the oil separates to the edges,

Now add chilly powder, a pinch of turmeric and salt as needed, sauté for few secs,

Now add cooked green gram, stir bring it to boil

Add crumbled egg, stir bring it to boil, add little more water as needed to adjust the consistency. cook covered for 2 mins.

Finally add chopped coriander, switch off the flame.

Healthy and nutritious Green-gram egg curry is ready to serve as a side dish for Dal rice/sambar-rice or with Roti/s/poori’s.

Serve Green-gram curry with chopped onions, which enhances the taste of the dish.
