Grated Beetroot curry or how to prepare beetroot curry

The health benefits of beetroot is many.It is a natural blood purifier.So including beetroots in our diet at least once in a week we can enjoy its health benefits.Even those who are not big fans of this vegetable will love this easy beetroot curry.This is a very delicious,colorful and nutritious,best to pack as a lunch box dish with chapati for kids.
Preparation time – 15 min
Cooking time – 15 min
Serves -4
Ingredients :-
Grated Beetroot – 2 medium sized
Onion – 2 no s
Green chilly – 2 no s[chopped]
Curry leaves – 10 to 12 leaves
Coriander leaves – 1 /2 cup
Mustard seed – 1/2 tsp
Chana dal – 1 tsp
Urad dal – 1/2 tsp
Sugar – 1 tsp
Salt to taste
Oil – -2 tbs.
Procedure:-
Heat a pressure cooker pan add oil,when oil becomes hot add mustard seeds.
When it begins to sparkle add chana dal,urad dal fry until golden brown in color. Add green chilies,curry leaves and coriander [chopped] together and fry for 30 sec add chopped onions cook till it becomes translucent then add coriander powder mix it.
Now add grated beetroot and fry till raw smell disappears,add sugar and salt mix properly.Aadd one cup of water, pressure cook for 1 whistle and turn off the flame.
[Note – If you need a juicy curry add more water/if you need a thick curry add less water]
When cooker becomes cool,bring the curry to boil for 5 min add turn off the flame.Transfer it to a serving dish and enjoy as a side dish with chapati/roti/rice.
