Gobi paratha recipe I Cauliflower paratha

Cauliflower paratha or gobi paratha is an Indian flatbread prepared with whole wheat flour and stuffed with a very delicious and spicy stuffing, prepared with the combination of finely onion, grated cauliflower, and spices, which is easy and tasty, loved by all age groups. Cauliflower paratha is typically served with pickle and yoghurt which is ideal for breakfast and lunch boxes.
Ingredients:
For stuffing –
Cauliflower – 1 bowl grated
Onion – 1 or 2 finely chopped
Cumin – 1/2 tsp
Ginger garlic paste – 1 tsp
Coriander – 1/2 tsp
Chilly powder – 1 tsp
Garam masala powder – 1/4 tsp
Turmeric powder – 2 pinch
Coriander – 2 – 3 tbs
Salt to taste
To prepare dough –
Whole wheat flour – 500 gm
Water
Salt
Oil – 1 tsp to knead
Oil/butter/ghee to fry

Method:
To prepare dough –
Add wheat flour and salt in a bowl, add little by little water, knead to a smooth dough, add oil, knead it properly and set aside.
To prepare stuffing –
Heat oil in a pan, when it is hot add cumin allow it to splutter, add chopped onion and saute until onion turns to translucent, add ginger garlic paste and fry until you get a fresh aroma,
Add spice powder fry properly, add grated cauliflower and fry it for 5 min,
Add salt to taste sprinkle little water and cook in a low flame,
Close the lid and cook until it is done, and the water in the mixture must evaporate fully from it.
Ensure the water in the mixture is evaporated, remove it from the flame and add chopped coriander, mix, allow the mixture to cool, spread it on a plate to cool.
When the mixture is ready to prepare paratha’s,
Take a medium size ball , dust wheat flour and roll it to a circular shaped circle, add 2 tbs of mixture on the center of it,
Seal by gathering the edges.
Flatten it using hand and roll into 6 inch diameter circle. Use dry flour to make rolling easy. Heat a tawa, when it is hot place the rolled paratha on it,
Fry the paratha on hot tawa, apply oil/butter/ghee on both side,
Fry until the base of the paratha’s becomes golden brown. Repeat the same process for rest of the paratha’s.
Enjoy paneer paratha’s with thick yogurt (sprinkle chaat masala powder,cumin powder, chilly powder and salt) accompany it with pickle.
