Garg obbattu or holige is a traditional south Indian recipe, There are various ways of making obbattu with different ingredients.Garg Obbattu is a very rare and one of an old recipe which was prepared in olden days and mostly made during marriages & other special occasions.It is a quick and easy to make recipe prepared with simple ingredients like coconut, roasted gram and jaggery with flavour of cardamom and roasted poppy seeds, a stuffing is prepared and stuffed in a dough prepared with maida and rolled to make a round shaped obbattu ,Learn how to make “Garg obbattu”, with this recipe, for festivals or special events. Ingredients:

Ingredients – to prepare horana/stuffing

Coconut – 1 cup

Roasted gram – 1 cup

Jaggery  – 1 cup (grated)

Cardamom – 5 no

Poppy seeds – 2 tsp

Ingredients to prepare Dough –

Maida/all purpose flour – 2 cup

Oil – 1 Tsp

Water to knead

 

Method:

How to make or prepare garg obbattu –

Take a mixer jar add roasted gram and make a dry fine powder of it and keep ready.

Grate coconut and keep aside

Dry roast poppy seeds to golden brown

Make a coarse powder of poppy seeds and cardamom powder and keep ready

Add grated jaggery in a kadai heat it by adding little water

When  jaggery dissolves in water, bubbles appears to come keep steering,add grated coconut mix together

Cook in a medium flame for a minute then add roasted gram powder and mix once again

Add poppy seed and cardamom powder and mix all together

Turn off the flame, allow the mixture to cool

 

Procedure –

Take two cups of maida in a bowl add water and prepare a dough as chapati/roti dough add 1 tsp of oil and knead to a soft dough

Make small round shaped ball of a lemon size of prepared mixture (horana)

Take a lemon sized ball of prepared dough and stuff Horana/stuffing inside

Roll to a round shaped thin roti

Take a flat tawa add ghee or oil and cook until golden brown, apply oil/ghee around it and flip to the other side and cook until golden brown

Remove and continue the same procedure for other

Yummy Garg obbattu is ready to be served to enjoy the dish with fresh ghee.
