Egg Masala curry

Eating egg has several health benefits. This curry is a simple and easy to prepare with very less ingredients which taste really good as a side dish for rice. This curry is made using any sambar powder which gives a special flavour for curry.

Preparation time – 3 to 5 min

Cooking time – 15 min

Serves – 4

Ingredients :

Raw egg – 4 to 5

Onion – 2 medium size ( chopped)

Mustard seeds – 1/4 tsp

Sambar powder – 1 to 1 1/2 tbs

Turmeric powder – 1/2 tsp

Curry leaves – 10 leaves

Oil to fry

Salt to taste

Coriander leaves for garnishing

Procedure :

Heat a Kadai add oi, when oil becomes hot add mustard seeds, when it becomes to crackle add curry leaves, chopped onion. Fry till onion becomes brown in colour. When Onion becomes brown in colour add sambar powder and turmeric powder and fry for a while about 3 min and add 1 cup of water and salt to taste. Bring it to boil till it becomes thick curry and till the raw smell evaporates.

When it becomes thick, break egg add it on curry, do not disturb it. Add one by one as shown in the picture.

Cook in a low flame for 5 to 8 min by covering the lid of the kadai, when egg is cooked flip to the other side  carefully one by one and cook till it is done in slim flame, turn off the flame. Remove the cooked eggs in a single lump one by one carefully.

Transfer the dish to a serving plate, garnish it with chopped coriander leaves and enjoy as a side dish for rice.
