Egg curry recipe

Egg curry is a spicy and tasty curry which is a perfect dish for roti,chapati, poori or for rice,it is a south Indian style curry prepared by adding spices blended with coconut which gives a delicious taste to the curry .The slit boiled eggs absorb the flavor of the spices and gives a unique taste.It is a quick and easy to make recipe with simple ingredients.
Preparation time – 15 min
Cooking time – 15 min
Serves – 4
Ingredients – To grind masala
Coconut – 1 cup
Onion – 1 medium sliced into pieces
Ginger – 1/2 inch
Garlic – 8 cloves
Cloves – 4 no
Cinnamon – 2 small pieces
Poppy seeds – 1/2 tsp
Coriander leaves – 1 small bunch
Coriander powder – 1 tbs
Chilly powder – 1 1/2 tsp
Turmeric powder – 1/2 tsp
Ingredients for seasoning –
Oil – 1 tbs
Onion – 1 medium chopped
Bay leaves – 2 small leaves
Egg – 5 egg(4 boiled eggs+ 1 raw egg )
Method –
Take a mixer jar add all the ingredients to grind, blend it to a fine paste and keep ready
Boil 4 eggs remove the shell, make slit or pierce hole by using a fork around the boiled eggs and keep aside
Heat a pan by adding oil in it, when oil is hot, add bay leaves and chopped onion, fry until the onion turns to light brown in colour,then break an egg, fry until it scrambled
Add grounded paste, saute for a while,
Add water combine to your desire consistency, add salt to taste, bring the curry to boil
Add boiled eggs into the curry and boil for 5 to 8 min in a medium flame, switch off the flame.
Aromatic egg curry is ready to be served with roti/rice.
