Dragon chicken

Dragon chicken is a yummy Indo Chinese chicken dish. It tastes irresistibly yummy and looks very appetizing due to its dazzling reddish color. Here is a very simple and yummy recipe of Dragon chicken, that could be served as a delicious appetizer or as a side dish with fried rice or noodles.
Ingredients:
For marination –
Boneless chicken – 500 gm (cut into thin strips)
Corn flour – 1/4 cup
Maida/all purpose flour – 1/4 cup
Ginger garlic paste – 1 tbs
Red chili sauce – 1 1/2 tbs
Kashmir chili powder – 2 tsp
Dark soy sauce – 2 tsp
Egg – 1
Ajinamoto – 1/4 tsp (optional)
Pepper powder – 3/4 tsp
For seasoning –
Dry red chili – 4 to 5 no’s
Cashew nut – 3 tbs
Ginger garlic paste – 1 tsp
Onion – 1/2 cup chopped
Capsicum – 1/4 cup chopped
Red chilly sauce – 2 tsp
Dark soy sauce – 2 tsp
Tomato sauce – 1/4 cup
Sugar – 1 tsp
Salt
Spring onion and coriander – 1/4 cup chopped for garnishing

Method:
Take chicken in a bowl, add all the ingredients for marination, mix well, let it marinate for 30 min,
After marination, heat oil in a pan, deep fry marinated chicken to golden brown in 2 or 3 batches. drain and keep ready.
Keep all the other ingredients handy,
Heat little oil in a shallow pan, when it is hot add cashew nuts, fry until it turns to golden brown
Add dry chilies, saute, add chopped onion fry until it turns translucent, then add ginger garlic paste fry until you get a fresh aroma, add chopped capsicum, saute,
Add sauces, fry for a while,
Add sugar, a pinch of salt, mix well, Cook this for a couple of mins till the water evaporates and sauce thickens. Add deep fried chicken into it, toss it well,
Finally add chopped spring onion and chopped coriander toss well remove from the flame.
Serve hot
