Curry leaves chutney recipe

Typical South Indian Chutney made using Fresh Green Curry leaves, this curry leaves chutney or kadi patta chutney is an ideal accompaniment for idly, dosa, vada or for any Indian snacks. Curry leaves are natural flavoring agents with a number of important health benefits, which makes your food both healthy and tasty along with pleasing aroma.
Preparation time – 10 min
Cooking time – Just seasoning(about 3 min)
Serves – 4
Ingredients –
Coconut – 1 cup grated
Fresh curry leaves – 1 cup or 10 springs
Green chilies – 2 no’s
Garlic – 2 cloves
Roasted gram – 1 tbs
Salt to taste
Oil – 1/2 tsp
How to prepare or to make curry leaves chutney –
Heat a pan by adding 1/2 tsp of oil in it,when it is hot fry green chilies till it turns to translucent and set aside.
In the same oil fry curry leaves and allow them to cool for a while.
Add all the ingredients to a blender and blend to a paste by adding water.
Chutney should be blended coarsely no to be grounded too finely.
Healthy and tasty curry leaves chutney is ready to be served with idly, dosa, akki rotti, paddu or any other Indian breakfast or for snacks.
Tips – You can also add fresh coriander leaves to enhance the taste of the chutney.
You can add ginger other than garlic which gives a different taste and flavour to the dish.
Please take care while frying curry leaves don’t over burn as it spoils the taste of the dish, so stir fry in a medium flame.
