Cucumber sambar

Cucumber is one such vegetable that has numerous benefits. Cucumber can also be used to make curries and sambars. Cucumber sambar is a quick and easy comfortable sambar to accompany with rice/any south Indian breakfast dishes/ rotis, try this easy cucumber sambar recipe. You’ll just need some simple ingredients to make this sambar.
Ingredients:
To cook –
Moong Dal – 1 cup
Cucumber – 250 gm
Green chili – 4 no’s adjust to your taste
For seasoning –
Oil – 1 tbs
Mustard – 1/2 Tsp
Cumin – 1/4 tsp
Curry leaves – 2 springs
Red chilies – 2 no’s broken into small pieces
Garlic – 4 no’s peeled and crushed
Onion – 1 medium chopped
Coriander – a small bunch chopped
Coconut – 2 tbsp grated
Turmeric – 2 pinch
Salt to taste

Method:
Peel the cucumber, remove the seeds in it, if it is tender you can add without removing the seeds. Cut it into medium sized cubes, slit green chilies and keep ready,
Heat a pressure cooker pan, when it is hot dry fry moong dal until it becomes hot, add 1 1/2 cup of water, add green chilies, pressure cook it for 2 or 3 whistles. Cook cucumber cubes in a separate vessel by adding water. (no need to pressure cook cucumber as it takes less time to be done) Once done mix cooked dal and cooked cucumber and keep ready.
Heat a heavy bottomed vessel by adding oil to it, once it is hot sizzle mustard and cumin, then add curry leaves and broken chilies, saute for few secs, then add crushed garlic, saute until the raw smell disappears, then add chopped onion, fry until light brown on a medium flame.
Add 2 generous pinch of turmeric, fry for a while, add dal mixture, add water if necessary to adjust the consistency, the consistency of the curry must be medium thick in consistency. Stir, add salt to taste.
Add grated coconut and chopped coriander. Bring it to boil for 5 min on a medium flame.
Healthy and delicious Cucumber sambar is ready to Serve. Enjoy this healthy sambar with Rice/ Roti’s / as a side dish for Idli, Dosas.
