Cucumber raitha recipe

Cucumber raitha is yet another very simple and easy side dish to be made for all seasons. cucumber raita is simple, quick,healthy and a lovely dish, fresh cucumber raitha served as a side dish for biryani, pulao or as a side dish for rice or roti.
Prepration time – 10 min
Cooking time – 1 min (just tempering)
Serves – 2
Ingredients to prepare cucumber raitha –
Cucumber – 2 small
Curd/yogurt – 1 cup
Coriander leaves – 1/4 bunch finely chopped
Coconut – 2 tbs grated (optional)
Pepper powder or chopped green chilly (optional)
For tempering –
Mustard seeds – 1/4 tsp
Cumin seeds – 1/4 tsp
Curry leaves – 1 spring
Red chilly (kashmiri/byadgi) – 1 cut into small pieces
How to prepare / to make cucumber raitha –
1. Peel the skin of the cucumber and grate it and keep ready.
2.Remove the excess water after grating cucumber.(don’t squeeze just remove the excess water)
3. Take a bowl add grated cucumber,chopped coriander leaves,grated coconut, chopped green chilly or pepper powder ,Mix altogether finally add fresh thick curds/yogurt and mix altogether, add salt to taste.
4. Heat a tsp of oil in a tadka pan,when it is hot add mustard seeds ,when it starts to splutter, add cumin seed allow it to splutter,add curry leaves and red chilly and remove from the flame.Add this tempering to prepared raitha. Mix everything once again.
