Coconut rice recipe I Thengina kayi anna I Kayi anna

Coconut rice is a traditional rice recipe which is served with a combination of veg or non veg kurma or spicy curries ,it is a perfect dish for party or a festive dish.It is prepared by using jeera samba rice which gives a rich aromatic flavour to the dish,it is simple and easy to make recipe with less ingredients best when served with curry .In our mother tongue this dish is commonly known as Thenginakai anna prepared for special occasions.
Preparation time -10 min
Cooking time 20 min
Serves – 8
Ingredients –
Jeera samba rice – 3 cup
Cashew nut – 1/4 cup
Bay leaves – 2 no’s
Cloves – 6 no’s
Cinnamon – 4 to 5 no’s
Elachi – 2 no’s
Coconut – 1 big part/1 big bowl grated
Salt to taste
Oil/ghee to fry
How to prepare coconut rice
Take a mixer jar add coconut and grind to a fine paste by adding sufficient water and keep ready.
Heat a casserole by adding oil/ghee in it ,when oil becomes hot add bay leave and spices as shown inthe image
When it becomes to splutter add cashew nut stir fry till it turns to golden brown in colour(do not over fry )
Wash jeera samba rice and drain the water,add it and fry for a while.
Add grounded coconut paste mix together
Add 5 and a 1/2 cup of water for 3 cup of water add salt to taste
Bring it to boil when it begins to boil make cook in a low flame close the lid of the casserole for 15 min , stir in between once or twice till it is done
When rice is done turn of the flame ,transfer the dish to a serving dish and enjoy the dish with veg or non veg kurma.
Aromatic, delicious coconut rice is ready to be served with Spicy curry.
