Coconut rice I Tengai sadam recipe

Coconut rice is a tasty rice recipe made with coconut. It is an easy and tasty south Indian variety of rice recipe. Coconut rice is fragrant, easy to make and the nutty flavor of cashew or peanuts, crunch from Bengal gram, Black gram, aroma of coconut oil and curry leaves along with freshly grated coconut makes it a dish packed with flavors and texture. Popular lunchbox dish, a quick food to feed a large group of people.

Serves – 4
Ingredients –
Coconut oil – 2 tbs
Mustard seeds – 1/4 tsp
Cashew nuts pieces or peanuts – 2 tbs
Bengal gram – 2 tsp
Split Black gram – 1/2 tbs (optional)
Dry red chili or green chilies – 3 no’s
Curry leaves – 2 or 3 springs
Asafoetida powder – 1/4 tsp
Fresh grated coconut – 1/2 cup
Precooked and cooled rice – 2 cup
Salt to taste
Method –
To make or to prepare coconut rice I Tengai sadam –
Heat a kadai by adding oil in it, when it is hot add mustard seeds As they crackle – add cashew nuts pieces or peanuts, Bengal gram and split black gram (optional) and saute them on low heat till they are golden.
Then add red chili, curry leaves and asafoetida.
Add the grated coconut immediately and cook on medium low heat, stirring often, the coconut shouldn’t over cook.
Now add the cooked rice and sprinkle salt and gently mix well.
Add fresh coriander (chopped), mix altogether.
