South Karnataka style chicken biryani is an aromatic and delicious main course.  Jeera samba rice is a traditional rice in Southern India, It gives a rich flavor to Biryani, biryani is the magic dish that draws all your sense and taste buds together, any South Indian cannot live without them. Herbs and spices gives special taste and aroma. A traditional and unique way of making biryani. A lip smacking rice dish to all Non-veg lovers. Just give a try and enjoy for any occasions.

How to prepare or to make Traditional south Indian chicken biryani –

Ingredients to prepare paste -1

Garlic – 3 whole

Ginger – 3 inches

Cloves – 8  nos

Cinnamon – 5 no’s

 Ingredients to prepare paste – 2

Mint leaves – 1 big bunch

Coriander leaves – 1 big bunch

Onions – 3 medium

Green chilies – 10  to 12 no’s

Ingredients to prepare paste – 3

Coconut grated – 1/2 cup

Method –

To make or to prepare south Indian style chicken biryani –

Take a pressure cooker pan, add chicken pieces and salt  about 1 tbs, Cook till the water in the chicken evaporates fully , then add 2 cups of water,

pressure cook to 1 whistle and set aside.

Prepare paste-1, 2 and 3 separately as shown above ,the paste should be grounded coarsely not to be grounded finely and keep ready.

For seasoning/ or to start –

Jeera samba rice – 2 – 3 cups .

Bay leaves – 3 to 4 nos

Cinnamon – 4 nos

Cloves – 5 to 6 nos

Fennel seeds –  ½ tsp

Star anise – 2 nos

Cardamom – 2 nos

Onion – 1 medium (chopped)

Coriander leaves – 1 big bunch chopped

Mint leaves – 1 big bunch chopped

Fenugreek leaves – ½ bunch chopped

Dill leaves – ½ bunch chopped

Coriander powder – 1 tbs

Turmeric powder – 1 tsp

Oil to fry

Salt to taste.

Procedure –

Take a large heavy bottomed vessel or a casserole, add oil heat it, when oil becomes hot, add bay leaves, fennel seeds, clove,cinnamon,cardamom,star anise and saute for a while.

Add onion fry till it turns to translucent.

Add all chopped herbs and saute for a while.

Add paste -1 and stir fry till you get flavored aroma.

Add paste -2 stir fry till the oil separates from it.

Next add paste -3 and saute for a minute.

Add coriander powder and turmeric powder mix all together properly for a minute.

Then add precooked chicken pieces , saute for a while and close the lid of the container for 3 min ,then add water ,

Add water about 1:2 proportion i.e. for 2.5 cup of rice add 5 cup of water we have already put 2 cups for chicken, so another 3 cups water to the container.

Bring it to boil, when it starts to boil, add jeera samba rice into it and add salt to taste, Cook in a high flame, until it begins to boil.  lower the flame /cook in a low flame for 30 minutes by closing the lid of the container.

Stir occasionally once or twice before it is done.

Aromatic, delicious Biryani is ready to be served.

This traditional south Indian biryani is always served on a plantain leaf with Pudina /mint masala chutney, boiled egg, chicken curries, onion tomato salad ,lemon wedges,onion and tomato slices. South Indian homemade Biryani  is ready to be serve.

Tips – Biryani tastes rich if it is cooked /prepared in a container or in a casserole instead of using a pressure cooker.

No need to soak jeera samba rice, just rinse in water once before adding it.

        Hi dear kusuma,

        Adding jeera samba rice gives a nice aroma of its own,but you can prepare with sona masuri rice aswell.

      Add twice the quantity of all the ingredients, add spices to adjust to your taste. Always prefer to add 1 kg rice for 1 k chicken /mutton. Happy cooking 🙂 Thank you for trying my recipe 😊
