Chakli /Chakkuli is a popular snack throughout India. Chakli is a crispy and delicious snack that is prepared for holidays, festivals and other traditional functions. Chakli is prepared with rice, urad dal, roasted gram, and red chilies are the main ingredients which make a crispy and tasty chakli’s which can be preserved for many weeks in an airtight container. A traditional chakli recipe which is crispy and melts in the mouth, just irresistible in taste
Ingredients:
Method:
Wash and drain the water of rice and spread it on a cotton cloth /mat to dry (in a shade ) till the moisture disappears, remove and keep aside.
Note – Do not dry rice under the sun should be dried inside the house /under a shade.
Heat a Kadai add urad dal and dry fry till it turns to light brown in color in a medium flame and keeps aside
In the same Kadai add roasted gram fry for a while and keep aside
Now add all the ingredients together and make a fine powder of it and keep ready. Chakli flour is ready.
Ingredients to prepare chakli –
Chakli flour – 4 cup
Butter – 100gm
Cumin seeds – 2 tsp
Cooking soda – 1/4 tsp
Salt to taste
Procedure –
Add chakli flour in a bowl add all ingredients as shown in the image
Mix all the ingredients together with the flour, mix butter properly with the flour,
Then add sufficient water and make a soft dough similar to a chapati dough and keep ready.
Take a chakli maker/machine fill it with the prepared dough, and press/screw it to make chakli on a plate/plastic sheet/butter sheet
Meanwhile heat oil in a Kadai to deep fry.when oil becomes hot add prepared chakli gently into the oil one by one
Deep fry in a medium flame till it becomes light brown and crisp, turn to the other side and fry
Remove from the oil when it is done and keep aside.
Crispy and yummy chakli is ready to be served, preserve it in an airtight container for many weeks.
Another method –
You can also make chakli with regular rice flour – dry roast urad dal, as shown above, allow it to cool completely, then transfer it to a mixer jar, make a fine powder and sieve it and keep ready. Next, add roasted gram and red chilies (Byadgi) to the same mixer jar and make a fine powder, sieve it and keep ready.
Measurement in a standard-sized cup –
Rice flour – 4 cup
Roasted Urad dal flour – 1 cup
Roasted gram flour – 1 cup
Red chilies (Byadgi) – 20 no’s
Cumin – 1 tbs
Sesame – 1 tbs
Butter – 100 gms
Salt – 1 tbs
Cooking soda – 2 pinch (optional)
Mix all the above ingredients to a chapati dough consistency, and follow the above procedure.
( If you are making for 3 cups of rice flour add 3/4 cup of roasted flour…)
