Carrot Halwa with kova

Carrot Halwa is a Rich Indian Dessert made with fresh carrots, milk, sugar and kova, A classic sweet recipe simple ingredients, an easiest and delicious sweet recipe that can be made , I have prepared it in an easier method using the pressure cooker, Carrot Halwa is very tasty and easy recipe to prepare for any occasions, i made it in bulk for my son’s birthday. Carrot Halwa is most favorite dessert for all, Its perfect to enjoy warm carrot halwa along with a scoop of Vanilla Ice cream 🙂
Ingredients:
Carrot – 1 kg grated
Sugar – 750 gm (adjust to your taste)
Milk – 500 ml
Ghee – 200 ml
Kova – 200 gm
Cardamom – 1/4 tsp freshly crushed
Dry fruits – Cashew nut, chopped almonds, pistachio

Method:
- Rinse carrot, peel it and grate it by using a grater or make it in a food processor and keep ready.
- Keep all the ingredients handy to start.
- Take a pressure pan, boil 2 cup of water in it for 5 to 6 minutes, remove it/waste it. ( to prevent milk from curdling while you cook)
- Add ghee in the pressure pan, when it is hot fry dry fruits until golden brown, remove it and set aside, add grated carrot in the same ghee,
Mix well,
Fry until it gets pale in colour,
Add milk, stir , bring it to boil
Close the lid of the pressure pan, cook it for 1 whistle,
When the pressure releases by its own, open the lid, bring it to boil for 5 to 6 min until milk gets absorbed. Add sugar, stir until it turns to thick in consistency
Ensure that that the mixture reached to thick in consistency (to halwa consistency), the ghee starts separated from the edges
Crumble kova in a bowl, add it into, mix well
Keep stirring, Cook until kova melts in the mixture completely for 3 to 4 min.
Add cardamom powder , mix properly, remove from the flame,
Add roasted nuts, mix it once again
