Broccoli Egg Fried Rice

Broccoli Egg fried rice is a quick and easy fried rice, a perfect way to get your family to eat veggies. Broccoli is a nutritious vegetable loaded with calcium, vitamins, magnesium and a good source of vegetarian proteins which must be included in the diet often. A mild spicy yet delicious rice dish loaded with vegetables and egg, Hope you will like it for sure.
Ingredients:
Rice – 2 cups cooked
Onion – 1 cup chopped
Broccoli – 500 gm
Carrot – 1/2 cup chopped
Cabbage – 1/2 cup chopped
Capsicum – 1/2 cup
Green peas – 1/2 cup cooked
Egg – 4 or 5 no’s
Garlic – 1 tsp minced
Garlic – 3/4 Tsp minced
Green chilies – 3 or 4 no’s
Vinegar – 1/2 Tsp
Soy sauce – 1 Tsp
Salt to taste
Pepper powder – 1/2 tsp

Method:
Soak Basmati rice for 20 mins, then drain it and keep ready. Heat 5 to 6 cup of water in a vessel, when it begins to boil add rice into it, cook it on a high flame until it is cooked, then drain the water and allow it to cool completely and keep ready. (take care not to cook until mush, it should be soft but remain intact.)
Cut Broccoli into small florets, put it in hot water with little salt for few mins then drain it and keep aside, keep all the other ingredients handy.
Heat a wide pan with oil in it, add egg into it fry until it gets scrambled on a medium flame add a little salt to taste, once it is done remove it separately and set aside.
In the same pan add oil, when it is hot fry ginger garlic, then add onions and chilies stir until it turns translucent.
Now add carrot, french beans, cabbage fry for few mins
Add capsicum continue to fry, then add cooked green peas and broccoli stir
Fry until broccoli becomes soft,
once it is done add vinegar and soy sauce, stir for few secs.
Add rice into, toss it well on a high flame,
Finally, add pepper powder and scrambled egg toss once again.
Transfer it to a serving dish, Serve hot
Broccoli egg fried rice is ready to enjoy.
