Breadfruit fritters I jeegujje fry recipe

Jeegujje is known as Bread fruit and is widely cultivated and consumed in Karnataka coastal regions, a typical south canara dish. Breadfruit one of the common vegetable found in every household when it comes to Mangalore cuisine, a similar to jack fruit available during the summer season and in the month of the monsoons. It tastes similar to potato but different in many ways. The texture doesn’t mush up when fried but does turn mushy if overcooked in a curry. Breadfruit tastes fabulous when it is deep fried.Just try and enjoy:)
Preparation time – 15 min
Marination time – 30 min
Cooking time – 10 min
Serves – 4
Ingredients –
Breadfruit – 1/2 of a big breadfruit sliced
Ginger, garlic paste – 1 tbs
Chilly powder – 1 tbs
Vinegar or lime juice – 1/2 tsp
Rice flour – 2 tbs
Corn flour – 1 tbs
Turmeric powder – 1 tsp
Curry leaves – 1 bunch
Salt to taste
Oil for deep frying
How to prepare or to make Breadfruit fry –
Vertically slice the breadfruit in half. Smear a sharp knife (only the blade) with a little oil and remove the skin. Then vertically cut the two slices again – so you have 4 parts in all. Carefully remove the center portion (the pith) of the breadfruit & discard. Now cut the breadfruit into thin slices. Keep aside.
Prepare the batter by placing all the ingredients in a wide and shallow bowl, add rice flour, chilly powder, ginger garlic paste, turmeric powder and salt to taste.
Add water and make a thick batter, ensure that there is no lumps in prepared batter
Add sliced bread fruit and mix it properly and set aside for at least 30 min
After marination add 1 tbs of cornflour and mix once again properly.
Heat oil in a kadai and deep fry marinated bread fruit pieces to golden brown and crisp gently flip them over to fry on the other side. The fritters should be golden in colour.
Carefully remove the fritters with a slotted spoon to drain off excess oil and place on an absorbent kitchen tissue. Repeat process until all the slices are fried.
Finally deep fry 1 bunch of curry leaves in the same oil to crisp, remove it with a slotted spoon to drain off excess oil an mix it with deep fried breadfruit fritters and enjoy the dish with tomato sauce.
