Sorekai payasa is very tasty and healthy. bottle gourd is very good for health. It has been regarded as one of the healthiest vegetables. Bottle gourd cools your body, helps in weight loss, cures stomach problems and urinary infections. It keeps the heart healthy and relieves stress. Sorekai payasa or bottle gourd payasam is prepared using grated bottle gourd, coconut, and jaggery.

Ingredients:

Bottle gourd chopped finely or grated – 1 cup

jaggery – 1/2 cup (adjust as per your taste)

grated coconut – 1/2 cup

rice – 1 tbs (rinsed)

Poppy seeds – 1 tsp (optional)

ghee – 1 tbsp

cashews – 5 – 6

raisins – 7 – 8

cardamom – 4

 

Method:

Soak 1 tbs of rice for 30 mins, Peel and chop bottle gourd finely and keep ready.

Grind coconut, soaked rice, poppy seeds, cardamom into a fine paste, Grind it until very smooth paste by adding required water and keep ready.

Transfer the grated bottle gourd into a container with one cup of water, allow it to boil, reduce the flame, close the lid and cook until soft.

Add jaggery in another container, add 1/2 cup of water allow it to boil,

When it gets dissolved, ensure the bottle gourd is cooked then strain jaggery syrup into cooked bottle gourd mixture, stir,

Add ground coconut paste, stir properly, allow it to boil for few mins on a medium flame and remove from flame. Heat ghee in a pan when it is hot fry cashew nut and raisins until golden brown, add it to prepared payasam along with the ghee.

Serve hot and enjoy.
