Boneless chicken dry

Boneless chicken dry is a delicious and an easy to make a side dish, a cashew nut based tasty side dish which can be prepared easily with simple ingredients, to serve as a side dish for rice or Rotis/ can be stuffed in bread to make chicken sandwiches.
Ingredients:
To marinate –
Boneless chicken – 250 gm
Turmeric – 1/4 tsp
Lemon juice – 1 tsp
Salt
To grind –
Cashew nut – 20
Kashmir chilly – 6
For seasoning –
Green chili – 2 or to slit
Curry leaves – 3 springs
Onion – 2 chopped
Ginger garlic paste – 1/4 tsp
Garam masala powder – 1/4 tsp
Coriander – 3 tbsp chopped
Ghee – 1 1/2 tbs

Method:
Rinse chicken, drain the water in it completely, cut it into small cubes, add it in a bowl add all the ingredients to marinate, mix well and set aside at least for 30 min.
Add marinated chicken into a pan, cook until the chicken is cooked on a medium flame covered, without adding water, meanwhile grind cashew and chilies to a smooth paste and keep ready. Once the chicken is done, ensure the water in the chicken is absorbed, add cashew paste, cook covered for 5 min on a low flame, add a little water if necessary. Cook until the water gets absorbed completely. remove from the flame and set aside.
Heat ghee in a pan when it is hot, add green chilies, curry leaves saute for a while, then add onion fry until it turns light brown, add ginger garlic paste, fry until aromatic, add garam masala powder, saute, add cooked chicken, toss it well remove from the flame, add coriander mix well.
Serve as a side dish for rice or Rotis
Chicken Sandwich – Spread/stuff the prepared curry (remove the curry leaves and green chillies) on a slice of bread, cover another slice over it, apply butter on the both side, grill it /toast it on a Tawa. Serve hot.
