Bittergourd stir fry

A simple and easy-to-make curry with simple ingredients to serve as a side dish for rice or Rotis. Bitter gourd curry or Hagalakai palya is a traditional south Indian recipe served as a side dish for rice or Rotis. It has a unique taste that transforms it into a delicious curry.
Ingredients:
Bitter-gourd – 1 or 2 medium
Mustard – 1/2 tsp
Curry leaves – 1spring
Onion – 1 medium chopped
Tomato – 1 medium chopped
Sambar powder – 3 tsp Adjust to your taste
Turmeric – 1/4 tsp
Salt to taste
Jaggery – 1 tbs
Coconut – 2 tbsp grated
Coriander – a small bunch chopped
Oil to fry
Method:
Rinse bitter-gourd, cut it lengthy, remove the seeds in it, chop it into small pieces and keep ready.
Keep all the other ingredients handy.
Heat oil in a pan when it is hot add mustard, allow it to splutter, then add chopped onion and curry leaves, fry until onion gets translucent.
When onion turns light brown add chopped tomatoes
fry until tomatoes get soft
when the tomatoes get soft and cooked add chopped bitter-gourd, stir for few mins on a medium flame.
now add sambar powder, turmeric, jaggery powder, and salt to taste. Stir
Add 1/2 cup of water, cook covered on a medium flame until the veggies are cooked.
Ensure the veggies are done, it takes approximately 10 mins to do, once it is done, bring the curry to boil until the water gets absorbed completely, add grated coconut, mix with the curry, remove from the flame, then add chopped coriander.
Bitter gourd stir fry is ready to serve.
You can add tomatoes or tamarind juice in preparation.
