Bitter Gourd Fry I Hagalakayi Fry

Preparation Time : 15 min Cooking Time : 15 min Serves : 4

Bitter Gourd Fry is a very easy to make snack recipe, a crunchy and delicious fries can be served as a side dish for dal rice. A healthy snack to munch with a cup of tea.  

Ingredients:

Bitter gourd – 1/4 kg

Coriander powder – 1 tsp

Chilli powder – 1 1/2 tsp

Turmeric – 1/4 tsp

Asafoetida – 1/4 tsp powdered

Salt

Lemon juice – 1 tsp

Corn flour – 2 tsp

Rice flour – 1 tsp

Fine Semolina(Rava) – 1/4 cup for coating

Oil to deep fry

 

Method:

Rinse bitter Gourd, chop it into thin round slices, chop without removing the seeds (as it turns crispy once deep fried.) soak it in salt water for 15 to 20 min.

Add all the dry spices, corn flour, rice flour in a bowl, make a paste, add lemon juice, a little salt to taste, mix it properly, drain the water of soaked bitter gourd with a colander, mix it with the prepared paste.

Heat oil in a pan to deep fry, in a medium flame.

Coat each slice with Semolina (Rava)  and keep ready, once the oil is ready deep fry in a medium flame.

Fry until golden and crisp. once done, drain the excess oil with a slotted spoon, put it on a kitchen napkin to absorb excess oil in it.

Continue the same for rest in one or two batches.

Enjoy crunchy and spicy Bitter Gourd Fry with a cup of tea or serve as a side dish for sambar rice.

    Thanks for the recipe, Usha!! I bought these snacks at the store and they were very crunchy and tasty. Wondered how they did that!! I will try this sometime.
