Beetroot rice bhath recipe

Beetroot rice bhath is very easy to prepare and also very healthy.A great lunch box recipe,quick to cook and delicious recipe.Beetroot has many health benefits.Beets are high in immune-boosting vitamin C, fiber, with essential minerals.The lovely color of the this dish is so appealing.It’s a great way to get the kids to eat beetroot. Which is perfect for lunch box .

Serves – 4
Ingredients –
Rice – 2 cup (soaked for 15 min)
Beetroot – 2 big chopped finely
Onion – 2 medium chopped
Tomato – 4 medium chopped
Coriander – 1 big bunch chopped
Mint leaves – 1 big bunch chopped
Bay leaves – 3 no’s
Cloves – 8 no’s
cinnamon – 4 no’s
Cardamom – 2 no’s
mace – 2 flakes
To grind –
Coconut – 1/2 cup grated
Red chilies – 6 no’s
Ginger – 1 inch
Garlic – 1 big ( 15 cloves)
Poppy seeds – 1/2 tsp
Coriander seeds – 2 tsp
Fennel seeds – 1/2 tsp
Turmeric powder – 1/2 tsp
Procedure or to make or to prepare Beetroot rice bhath –
Heat a pressure pan by adding oil in it, when it is hot add bay leaves and other spices shown the above image, saute for a while then add chopped onion fry until it turns to translucent, add chopped herbs saute add chopped tomatoes and saute util it is soft and oil separates from it.
Add finely chopped beetroot into it and saute until raw smell evaporates from it.
Add all the ingredients to grind and make a fine paste by adding water .
Add grounded paste into it and saute well
Add 3 and 1/2 cup of water to cook 2 cup of rice bring it to boil, add salt to taste.
When it begins to boil add soaked and drained rice into it. Stir well and pressure cook in a low flame for 15 min. ( no need to bring out whistle, the rice will be done properly.) and turn off the flame.
when the pressure settles down on its own, remove the lid and gently fluff the rice.
Aromatic, spicy Beetroot rice bhath is ready to enjoy.
