Beetroot masala curry recipe

Beetroot masala curry is a spicy curry which taste good as a side dish for rice/roti. Beetroot has many health benefits. Beets are high in immune-boosting vitamin C, fiber, essential minerals like potassium and manganese.

Ingredients –
Beetroot – 2 medium sliced into small pieces
Coconut – 1/2 cup grated
Onion – 2 medium (1 for grinding and other for seasoning)
Fennel seeds/soumf – 1/4 tsp
Pepper – 10 corns
Cinnamon – 2 small pieces
clove – 2 no’s
curry leaves – 2 springs
Samber powder – 1 tbs
Mustard seeds – 1 tsp
Salt to taste
Oil to fry
How to prepare or make beetroot masala curry –
Take a mixer jar add grated coconut,chopped 1 onion,samber powder and spices and grind to a fine paste
Take a pressure cooker pan heat it by adding oil in it ,add mustard seeds when it begins to sparkle add curry leaves then add sliced beetroot fry for a while,add salt to taste
Fry the beetroot till the raw smell evaporates,add grounded masala paste into it.
Mix altogether and fry till the oil separates from it,add 1 cup of water to it and pressure cook for 2 whistles and turn off the flame.
Bring the curry to boil till a thick consistency .
Beetroot masala curry is ready to be served with rice/roti.
