Beetroot garlic curry

Healthy,delicious and quick beetroot garlic curry is a delicious curry to serve as aside dish for rice or roti .It is a very simple preparation with onion,curry leaves,garlic and grated coconut which gives a unique taste and flavour to the curry,do try this recipe and enjoy the dish as a side dish with rice or roti.

Serves – 4
Ingredients –
Beetroot – 2 medium size chopped
Mustard seeds – 1/2 tsp
Curry leaves – 2 springs
Onion – 2 medium chopped
Coconut – 1/2 cup
Garlic – 5 cloves
Chilly powder – 1 tsp
Salt to taste
Oil to fry.
How to prepare beetroot garlic curry
Add coconut and garlic cloves in a mixer jar and run the mixer jar without adding water to it.and keep it ready.
Heat a pressure cooker pan by adding oil in it,when it is hot add mustard seeds,when it begins to crackle add curry leaves.
Add chopped onion and fry till it turns to translucent
Add chopped beetroot and fry till the raw smell evaporates,add chilly powder and salt to taste
Add prepared coconut garlic mixture into it and fry for a while
Add 1/2 cup of water and pressure cook for 1 whistle.
When cooker becomes cool ,open the lid and bring the curry to boil.
When it reaches to a thick consistency turn off the flame .Garnish with fresh chopped coriander leaves.
