Ambur Chicken Biriyani is one of the south-Indian special biryani recipe, this biriyani gets its name from Ambur – located in the Vellore district of Tamil Nadu. It is a easy to make recipe with simple ingredients, prepared with jeera samba rice. It is a light spicy biryani which has a great in taste.

Cooking time – 30 min

Serves – 4

Ingredients –

Chicken – 1 kg

Jeera samba rice – 3 cup

Medium sized onions – 3 chopped

Tomatoes – 3 no’s chopped

Green chilies – 3-4 slit

Ginger-garlic paste – 2 tbs

Mint and coriander grounded paste – 1/2 cup

Mint leaves – 1 cup Chopped

Coriander leaves –  1 cup

Turmeric powder – 1/4 tsp

Red chili powder – 1 tbs

Coriander powder (or) chicken masala powder – 1 1/2 tbs

Yogurt – 1 cup

Salt to taste

Cooking oil

Cloves – 3

Cinnamon stick – 1/2

Bay leaf – 2-3

Star anise – 1

Green cardamom – 2

Method –

To make or to prepare Ambur chicken biryani –

Rinse chicken pieces in water twice or trice in water, drain the water in it and keep ready.

Heat a heavy bottomed pan by adding oil in it, when it is hot add

Bay leaves, cardamom, cloves, cinnamon, star anise saute in oil for a minute. Add ginger garlic paste, fry until you get a fresh aroma.

Add chicken pieces in to it and saute properly,

Add salt, turmeric and grounded mint and coriander paste in to it and combine

Add chopped onion, green chilies and tomato and mix altogether

Now add chopped coriander, mint, chilly powder and coriander powder, mix and cover the lid of the pan and cook for 10 to 12 in a low flame.

open the lid and stir altogether.

Add yogurt and combine

Add 5 1/2 cup of water (to cook 3 cup if rice) and bring it to boil. Check the salt if necessary add more.

Rinse rice in water drain it, and add it to the boiling mixture, combine and cover the lid of the pan and cook in a low flame for 15 min. Stir once or twice before it is done.

After 20 min, remove from the flame and rest it for 5- 10 min before you serve.

Transfer the dish to a serving dish.

Enjoy Ambur chicken biryani. Accompany it with chicken curry, boiled egg, onion tomato raita, onion tomato , and lemon slices.
