Aloo Poha

Aloo Poha is a regular breakfast dish. A popular breakfast dish in Maharastra popularly known as Batata poha, a quick, healthy and a light breakfast dish prepared with a thick variety of flattened rice. Potato and onion are the key ingredients to make this recipe. Potato is sauteed in oil which gives crispy and yummy taste to the dish.
Ingredients:
Thick flattened rice – 2 cups
Potato – 2 medium chopped/diced /cubes
Cumin – 1/2 tsp
Asafoetida – 1/4 tsp
Onion – 2 medium chopped
Green chilies – 3 or 4 chopped
Grated ginger – 2 Tsp
Coriander – a small bunch chopped
Curry leaves – 2 springs
Sugar – 2 tsp powdered
Salt to taste
Turmeric – 1/4 tsp
Roasted peanuts – 2 tbs
Coconut grated – 1/4 cup (optional)
Lemon juice – 1 Tsp

Method:
Rinse flattened rice, soak for 5 mins drain the water in it and set aside,
ensure the water gets drained completely, then add sugar, salt and turmeric toss it well and keep ready.
Keep all the other ingredients handy. Heat a pan with oil, when it is hot sizzle cumin, saute chilies, grated ginger, asafoetida, coriander for few mins, add potatoes saute in oil, cook covered for 3 min until it is cooked, then add onion fry until it turns to translucent
Now add soaked flattened rice, toss it well, cook covered for 5 mins then add roasted peanuts and chopped coriander.
Mix well, remove from the flame add fresh lemon juice. Toss it well
Sprinkle plain sev before you serve.
