Akki rotti I akki ubbu rotti I soft akki rotti I ಅಕ್ಕಿ ರೊಟ್ಟಿ

Akki rotti is one of the popular and traditional breakfast dishes of Karnataka, also made for lunch or dinner which is served with gravy based curry or chutney. Akki rotti means “rice bread” in the native language, Kannada. It is made of rice flour which is mixed with salt and water and kneaded well to form a smooth and soft dough.
Ingredients:
Rice flour/Akki hittu – 1 1/2 cups
Water – 2 1/2 cup
Oil – 1/2 tsp
Salt – 1/2 tsp
Cumin – 1 tsp
Coriander – 2 tbs chopped
Method:
Take a vessel to add 2 and a half cups of water in it, add cumin and cleaned and chopped coriander in it, add salt to taste, bring it to boil on a medium flame.
When it begins to boil, add cups 1 1/2 cups of rice flour into it, switch off the flame, mix it properly with a spatula, set aside covered for 5 to 10 mins.
After 10 mins, water gets absorbed, when the mixture is hot
Put the mixture on a flat surface/in a large bowl, knead it to form a smooth dough,
Divide the dough into medium-sized balls, dust rice flour to roll on a rolling board, roll it to a round shape roti with a rolling pin, dust the rolling board with rice flour to prevent it from sticking, roll to uniform thickness dusting rice flour if required,
If you are making in a pressing machine, place a polythene cover, apply little oil on it, place a dough ball in the center, place another oil greased polythene cover on it, close and press it gently,
Ensure it is pressed evenly if not close the lid and press once again gently,
Release the roti on your hand and put it on the hot Tawa, using a wet cloth. note, you need to wipe off only one side. once the base is partially cooked, flip over and cook. cook both sides partially as we will be cooking directly on the flame. now place on the flame directly, and allow to puff up.
