Pumpkin curry recipe

Pumpkin curry is a vegetarian Indian dish made with pumpkin a simple but delicious vegetable curry recipe, perfect side dish to serve with roti or rice. Which is quick and easy to prepare recipe with simple ingredients.

 

 

Preparation time – 10 min

Cooking time – 8 min

Serves – 4

Ingredients –

Pumpkin – 1/2 kg remove the skin, chop into small pieces

Mustard seeds – 1/2 tsp

Onion – 3 medium chopped

Green chilies – 2 chopped

Curry leaves – 2 springs

Coriander – 1 bunch chopped

Salt to taste

Oil to fry

Method – 

Remove the skin of the pumpkin and chop it into small pieces, rinse it with running water, drain and keep ready.

Heat a pan by adding oil in it, when it is hot add mustard seeds, allow it to sizzle. Add chopped chilies, coriander and curry leaves together, saute

Add chopped onion fry until it turns to translucent, cook in a medium flame.

Add pumpkin saute for a while, add salt to taste.

Add 1/2 cup of water, when it starts to boil close the lid of the pan and cook till it is done, stir occasionally before it is done.

Ensure that the water in it is absorbed fully  andpumpkin become tender and break easily without any effort, it means they are cooked.  Switch off the flame.

Serve with chapati, poori or polka’s and also enjoy as a side dish with sambar rice.

Note – Be careful while adding water to the curry as pumpkin takes less water to cook.

You can add grated coconut finally to enhance the taste of the curry which is optional.
